Cheese sticks and cheese croquettes
So let’s start first with cheese sticks, now you won’t surprise anyone with them – they are served in all cafes and restaurants. But what could be better than homemade. Choose your own cheese and spices.
- Mozzarella cheese – 12 sticks (slicing 10 cm long and 1-1.5 cm thick)
- Breadcrumbs – 2-3 cups
- Eggs – 4 pieces
- Spices – 2 tablespoons
- Flour – 2 cups
- Salt – 1/2 teaspoon
- Sunflower oil for frying
We usually use a set of spices – Italian spices, which include oregano, rosemary, thyme, basil and others. But, you can use any you like.
You can use store-bought breadcrumbs or make your own.
In one cup, mix breadcrumbs, spices and salt. Mix well.
Pour the sifted flour into another bowl.
In the third lightly beat the eggs
And now, in turn, roll each stick first in flour, then dip in eggs and roll in breadcrumbs
Once is enough, but if you want a thicker crust, then again dip the stick into the eggs (no need for flour) and roll again in breadcrumbs.
We put it on a flat surface and take on the next stick, flour-eggs-crackers-eggs-crackers. And so it is with everyone else.
Done, now we are ready to fry.
In a deep frying pan, cauldron, etc. pour oil (if there is a deep fryer, then it’s absolutely wonderful – set the temperature to 200 degrees) – the oil level should be at least 2 cm so that the sticks are completely immersed in oil.
Heat the oil over high heat.
As soon as the oil has warmed up (it’s easy to check – throw an onion feather or a clove of garlic there, and if the oil boils around it, then it’s warmed up well, don’t forget to get the onion before frying the sticks)
We fry the sticks in small batches, 3-5 pieces each (depending on your pan, you don’t need to stuff them a hundred pieces at a time, of course, you want to quickly, but, friends, patience, patience)
The stick is cooked up to 3-4 minutes. During this time, the cheese will melt and the outside of the stick will brown.
We spread the finished sticks on paper towels. let the oil in the pan heat up again to the desired temperature and lay the next batch.
That’s the whole recipe. Below is a recipe for cheese croquettes, according to which our grandmothers used to cook.
We separate the eggs into whites and yolks. Whisk the egg whites, grate the cheese and add to the egg whites. Knead and make small balls. Without covering, remove the finished balls in the freezer.
- Cheese – 200 grams
- Eggs – 2 pieces (medium size)
- Breadcrumbs – 2-3 tablespoons
- Sunflower oil – for frying
Separately, lightly beat the yolks.
Pour Breadcrumbs into a separate container, add a little salt and mix
We take the cheese out of the freezer, let it stand warm for a while. And then the process is almost the same as above:
Roll the balls first in the breadcrumbs, then in the egg yolk and again in the breadcrumbs.
Fry in a large amount of oil – 3-4 minutes.
