Eggplant fried with onions
Eggplant fried with onions and in a simple sauce. The recipe is really very simple. try it and you will like it.
- Eggplant – 2 pieces (medium)
- Onion – 2 heads (medium)
- Flour – 3-4 tablespoons
- Sour cream – 100 ml
- Tomato paste – 1 tablespoon
- Sunflower oil – 3-4 tablespoons (for frying)
- Salt and spices to taste
First, let’s prepare the eggplant:
Cut off the ends from the eggplant (on both sides), wash, pour over with boiling water and thinly slice (lengthwise, 5-7 mm thick).
Then the eggplant needs to be dried a little and rolled in flour.
And immediately put it in a pan, fry in oil for 3-5 minutes on each side. If the pan is small, do not try to cram all the eggplants in one go. Fry them in batches.
Eggplants are ready, now we take onion – we cut it into rings or half rings and also fry in oil, in a separate pan.
When the onion is ready, proceed to prepare the sauce.
In the pan where the eggplants were cooked, put sour cream, tomato paste. Let it boil, reduce the heat to a slow one and let the sauce cook for 7-10 minutes, try on the spices and add salt and pepper if necessary.
The sauce is ready.
Put eggplant on a dish, alternate with fried onions and pour sauce.
