How to make Mayonnaise. classic recipe
Mayonnaise recipe by Paul Bocuse
- Egg (yolk) at room temperature – 1 pc.
- Mustard – 1 teaspoon
- Sunflower oil – 200 ml
- Juice of one lemon (or 2 tablespoons red wine vinegar)
- Salt and ground black pepper – to taste
Place the egg yolk and mustard in a small bowl. Stir lightly with a whisk, then add salt and pepper.
Whisking constantly, pour in the oil, first drop by drop, then in a thin stream.
When the mayonnaise begins to thicken, continue to add the oil in an even stream.
Add lemon juice (or vinegar) to thin the mayonnaise. Then add spices (salt and pepper) to your liking
With this amount of ingredients, you should get 250 ml of mayonnaise.
